Creamy Honey and Caramel Sauce

Creamy Honey Caramel Sauce
1 ½ cups Mossop's Field & Tawari Honey (try it using Rewarewa Honey)
1 ½ cup Cream
1 tbsp Margarine or Butter
1 tsp Vanilla Essence
Pinch Salt

1. Combine honey and cream in a heavy saucepan.
2. Stir while cooking over medium-high heat until mixture reaches 238 degrees F
3. Stir in butter, vanilla and salt. Cool.
Using the same amount of cream as honey, makes the sauce milder and creamier. Delicious!
Serving Suggestions: Warm over Ice Cream; custard; pancakes or other puddings
