Lemon Muffins

 
1/2 cup Mossop’s Liquid Field & Tawari honeyLemon Muffin
2 Tbsp butter
1 egg, beaten
1/2 cup milk
2 1/2 cups flour
3 tsp baking powder
1 Lemon (medium to large)
1 tsp Lemon Zest
 
1) Beat honey & butter
2) Add egg, lemon, lemon zest and milk, beating after each ingredient is added
3) Mix dry ingredients together
4) Quickly but gently mix dry mixture and honey mixture - don’t over mix!
5) Bake in greased mufifn tray at 150°C for approx 25-30 minutes
