Makes a delicious, moist loaf.
1 ½ cups Water
1 cup Mossop’s Field & Tawari Honey
1 tsp Baking Soda
2 tsp Cinnamon or Mixed Spice
500g Mixed Fruit
3 cups Flour
2 tsp Baking Powder
1) Combine in a saucepan the water, honey, butter, fruit, baking soda and spices.
2) Bring to boil and simmer for 5 minutes
3) Allow to cool.
4) Sift dry ingredients and mix with fruit mixture.
5) Decorate with chopped apricots, pumpkin seeds, slivered almonds, etc.
6) Bake in 2 loaf tins at 150oC for one hour.
