Makes a delicious, moist loaf.
1 ½ cups Water
1 cup Mossop’s Field & Tawari Honey
1 tsp Baking Soda
2 tsp Cinnamon or Mixed Spice
500g Mixed Fruit
3 cups Flour
2 tsp Baking Powder
- Combine in a saucepan the water, honey, butter, fruit, baking soda and spices.
- Bring to boil and simmer for 5 minutes
- Allow to cool.
- Sift dry ingredients and mix with fruit mixture.
- Decorate with chopped apricots, pumpkin seeds, slivered almonds, etc.
- Bake in 2 loaf tins at 150oC for one hour.
