80g soft Butter
1/3 cup packed Brown sugar
2 tsp Cinnamon
1 tsp Ginger
2 3/4 cups Flour
1 tsp Baking soda
1 tsp Salt
2/3 cup Mossop’s Rewarewa honey
- Cream together Butter, Brown Sugar, Cinnamon and Ginger until smooth and light.
- Sift in Flour, Baking soda and Salt.
- Mix in Egg and Mossop’s Rewarewa honey.
- Mix until dough is coming together.
- Wrap dough in baking paper and chill in the fridge for at least 1 hour.
- Roll out on a floured surface, cut into shapes and place on lightly greased baking tray.
- Bake for 10 minutes at 175C.
